I crafted my recipe simple and easy. With my guide I will show how to make light and fluffy chiffon cake. Once you master this, you can make any flavor chiffon cakes you like.

We will begin by making the batter and I will show you how to fold in your batter with the merringue.

Do not worry if you don’t have chiffon mould, we will do in a muffin cup. Any paper cup is fine too. It is a trend in Japan to use paper cup for chiffon and also chiffon sandwich. We usually like it with cream and fruits.
Chiffon cake ingredients is easy to get.
We will need flour/cake flour, eggs, sugar, oil and water/milk/cream. No baking powder is needed. You can let me know what flavor you have at home. Matcha, strawberry, chocolate or earl grey?
We will need an oven 350F or 170-180C, 2 mixing bowl, a spatula, measuring cup/spoons and an electric hand whisk.

Since 2011, my family and I have been doing various cooking activities together with people around the world. It has been a great pleasure to cook with everyone in our house here in Tokyo. I have also attended baking school and after finished my course I have been baking a lot for parties, family & friends.

Since the COVID 19, I cannot make any experience here in Tokyo so now I would like to bring this experience to you in your own comfort kitchen to make Japanese cakes.
I would like to share with your this easy sweets recipe which my family and friends here have been making and enjoying.
I will also show you how to make different flavor of chiffon cakes when you master the basic chiffon cakes.

I will guide you slowly step by step.
All these ingredients are easy to get. If you have questions do not hesitate to contact me.

Kei is a very good teacher. One of us was in the US and the other of us was in Japan. She kindly personalized the list of ingredients to work for both of us. She had a separate camera showing her work space so that we could see exactly what she was doing. Her instruction was clear and easy to follow. I had a lot of fun and I was very pleased with the results of my baking under Kei's tutelage. Thank you Kei!

4 of us in seperate lock down locations baked along today. The cakes turned out fantastically well. Taste so delicious. Everyone made different flavours.. Thanks again Kei! Very easy to cook along with. Cooks at an easy pace. Answers all questions.

My 2nd class with Kei. Kei has such a “sunny” personality. It’s fun to listen to her and cook along with her. I enjoyed making and eating my earl grey chiffon cake and will make it again to perfect the chiffon texture. P.s. use prepare paper muffin cups rather than a cake mould! Paper cups are easier for this recipe.
