"Malivoire Wine is the magnum opus of Martin Malivoire. As a director of motion picture special effects, Martin’s career encompassed everything from television’s “Wayne and Shuster Comedy Hour” to such Hollywood big-screen attractions as “Resident Evil”, “A Christmas Story” and “Hairspray”. After thirty years, Martin decided the time for a change had come. The results came rapidly with the purchase in 1995 of what is now known as the Moira Vineyard, followed by the acquisition of the larger property where the winery now stands. Original plantings of Pinot Gris, Chardonnay, Gewurztraminer, Gamay and Pinot Noir were supplemented in the following years by additional vinifera varieties. Today, thanks to burgeoning demand, Malivoire operates at the top of its capacity, producing twenty-four thousand cases of wine per year."

"Take a moment, and take one sip. A winemaker’s responsibility to is transport you to that place. The place in time – mid sip, when every subtle nuance and every flavour of the vintage, is felt and experienced from the glass. The great wines take you to that place. A simple moment in time to enjoy some very un-simple wines. A GreenLane Estate Winery experience is just that. Experience an intimate glimpse into the artistry of the ever - particular winemaker. Wines are truly created. Never a set formula. Each vintage is unique, creating great wines that can be appreciated on many different levels. The winemaker’s treats – as they call them – are sometimes as limited as 25 cases."

Review by Mathieu G "Idk how a recently opened brewery could do better.. it's like they read the tutorial on how to open the perfect brewery from the get go and followed it to a T. First, they're located quite close to the falls if you're in town doing the tourist thing. Food was original and very tasty, including the vegetarian options. I should probably mention that their beer was spot on. Some cryo hops, some sours, a NEIPA, a double IPA, a stout... Just to name a few; a very well rounded beer selection with no obvious flaws. Atmosphere was relaxed, board games could be borrowed, lots of room to be seated and to top it all, you have a great view of the brewery from the mezzanine. Finally prices were reasonable, comparable to what I'd pay back home in a non touristy town. Cheers!"

"Founded in 2015, long-time friends Todd Barber and Dave Beifuss, made their dream a reality when they cracked open the doors to Kame & Kettle Beer Works in Fonthill, Ontario. The brewery received its name with a tip of the hat to the local topography, featuring the Fonthill Kame. In nature, kames are often associated with kettles and since Fonthill lacks a glacially formed kettle, we say our beer kettle completes this partnership. Eager to start, Dave and Todd fired up a 50L brewhouse and fermented with wine demijohns. This process is truly small batch and about as handmade as it gets. The taproom was carved out of the lower level of a downtown Fonthill building, where expansion has been ongoing ever since."

"At Lock Street Brewing Company, we follow the German Purity Law of reinheitsgebot (rine-heights-gah-boat), which emphasizes only four ingredients shall be used for the brewing of beer: 1. Water 2. Malt 3. Yeast 4. Hops We try to adhere to this rule for all beer brewed in our facility. If a particular beer does require an additional ingredient, we make sure that it is 100% organic and locally sourced from Niagara. There are no additives to speed up any aspect of the brewing process, and all brewing goes unfiltered. Any brew can spend between one to eight weeks in a fermenter before it is on tap or packaged. We pride ourselves on our philosophy “We take our time, so you can enjoy yours”, meaning we take our time perfecting every brew before you take your time to enjoy it."

Distilleries

"THE NIAGARA REGION We chose the location of our distillery for its proximity to incredible ingredients and wonderful people. We’re neighbours to farmers who grow great fruit and botanicals practically in our backyard, making it readily available to us as we need it. Our first products are made from a base of 100% Niagara wine grapes that would otherwise be thrown on the ground during the annual thinning process. We have them dropped into baskets instead of the ground before we ferment them, then distill. Many of our herbs are either grown by us or by local farmers. Our grain is sourced locally and we have an abundance of fruit everywhere you turn in the Twenty Valley. GREAT INGREDIENTS The story of our ingredients is the story of Dillon’s. We have access to fresh local product grown by so many amazing people using healthy, responsible practices on some of the best growing soils in the world. These elements are fundamental to Dillon’s and without them we wouldn’t be doing it. A close proximity to ingredients and materials means substantially less fuel and resource consumption attributed to our production; sourcing ingredients, shipping them and the cooling and bulk storage of organic ingredients. Our goal was to avoid this form of waste by proper situation and resource selection. RESPONSIBILITY Besides using grapes and other fruit that would have been left as waste, the spent rye grain is given back to farmers for animal feed once we have extracted all of the alcohol from it. It is an ideal high-protein animal feed that we are more than happy to give to local farmers and this ensures that another precious food resource is fully utilized."

Tours are available. "THE CANADIAN WHISKY TRADITION GOT ITS START DURING THE 1800S, WHEN OVER 200 INDIVIDUAL WHISKY MAKERS DISTILLED THEIR OWN, HOME-GROWN PRODUCTS. These first whiskies were typically made with a high percentage of corn as a base, mixed with rye and barley. As distilling traditions developed over the years, the standard mild, smooth-tasting Canadian whisky formula became popular across the continent – especially during Prohibition in the United States, and in the 1950s and 60s. The public’s tastes waned and veered towards white spirits and wine during the 70s and 80s, leading to a period of stagnation in Canadian whiskies. By the 1990s, the Canadian whisky industry had consolidated greatly, with only a few large distilleries making the majority of whiskies each year. It was during this time, in 1992, that John K. Hall, a winemaker with over four decades of experience in the industry, dared to follow his dreams of becoming a world-class whisky-maker and laid down the first stocks of Forty Creek in Grimsby, Ontario. BUCKING THE CATEGORY-WIDE TREND OF STAGNATION AND PLAYING IT SAFE, JOHN REINVIGORATED CANADIAN WHISKIES, CHANGING THE GAME WITH FRESH ENERGY AND A RENEWED ATTENTION TO INNOVATION AND FLAVOUR BEFORE ALL ELSE."
